Quick Cooking

It seems like the only time I cook a decent meal anymore is on Sunday nights. There's plenty of time and I'm relaxed enough to make cooking fun instead of a chore. Last week I made steak. Last night we had grilled shrimp. It was yummy, quick and Ali even liked it – always a plus!

Grilled Lime Garlic Shrimp

3 limes, juiced
3 cloves garlic, minced
1/4 cup olive oil
Salt and pepper
1 1/2 pounds shrimp, peeled and deveined
1/4 cup basil leaves, thinly sliced

Combine all ingredients in a glass bowl and marinate for 30 minutes. Skewer shrimp and grill 3 minutes on each side. Pass lime wedges at the table to squeeze on.

I served it with rice, a tomato salad and sliced cucumbers. It's a perfect summer meal!
